³ Description

Scalloped potatoes high in protein. Uses cottage cheese, with optional real cheese sprinkled on top.

² Ingredients

  •  1.5 cup Low Fat Milk
  •  1/2 tsp Red or Cayenne Pepper
  •  3 tablespoon Olive Oil
  •  5 potato medium (2-1/4" to 3-1/4" dia) White Potatoes (Flesh and Skin)
  •  2 serving (serving = 1/4 tsp) Kernel Season's Popcorn Seasoning - Nacho Cheddar
  •  1 tsp Sea Salt
  •  1 tsp Garlic Powder
  •  3 tbsp White Flour
  •  1 cup Lowfat (1-2% Fat) Cottage Cheese
  •  1 cup, shredded Lowfat Cheddar or Colby Cheese
   

q Directions

Slice potatoes thinly, put aside. Put olive oil in fry pan and warm. Add flour and Mix well. Add all milk, salt, garlic and cayenne pepper. Cool and stir until smooth. Using hand mixer, blend cottage cheese until smooth. Reduce heat a little more of mixture and stir in cottage cheese. Place half potatoes in a casserole dish lightly greased with olive oil. Pour half the cottage cheese mixture over the potatoes. Layer over the rest of the potatoes, and pour the rest of the mixture over. Sprinkle optional low fat cheese on top, paprika for color in top, bake 350f/175c for an hour. Also I used popcorn seasoning nacho flavor in the sauce, for a cheesier flavor! Boom! 20g of protein per serving!!
