A Rich Chocolate spin on Rice Pudding with a hint of Coconut!
In a saucepan, Add:
3/4 Cup Unsweetened Vanilla Almond Milk
1/4 Cup Water
1/4 Cup Quinoa
1/2 Teaspoon Vanilla Extract
1 1/2 TB Unsweetened Cocoa Powder
1 TB Unsweetened Coconut Flakes
1 Teaspoon of Coconut Sugar (or your sweetener of choice)
Bring to a Boil, Turn Flame to Low and Cover
Simmer for 25-30 minutes, stirring occasionally until Quinoa softens and sauce is fairly thick
Remove from Heat
After Pudding has Cooled (I put it in the refrigerator for 10 minutes), Add 2 TB Coconut Cream (A Can of Coconut Milk in the frig will separate and form a cream on top after it’s been chilled) and 1 Scoop Whey Protein Powder (I used "Now" Unflavored).

-Optional: If you want more (less rich) Chocolate, add in a TB of Semi-Sweet Chips
