Gluten-Free & Vegan Friendly Cookies. Crispy on the outside with a sweet chewy center.

² Ingredients

  •  1 medium Plantains
  •  1/2 serving (serving = 1/2 cup) Trader Joe's Organic Unsweetened Apple Sauce
  •  1.13 serving (serving = 1/3 cup) Bob's Red Mill Organic Oat Bran
  •  1.3 serving (serving = 3 tbsp) Let's Do Organic Unsweetened Organic Coconut Flakes
  •  0.24 serving (serving = 1 tsp) McCormick Pure Vanilla Extract
  •  3 serving (serving = 1 tsp) Madhava Coconut Sugar
  •  1/4 tsp Cinnamon
  •  1/4 serving (serving = 1 tbsp) madhava Light Agave Nectar
   

q Directions

Blend:
1 Very Ripe Yellow Plantain (skin should be mostly black)
1/4 Cup Unsweetened Apple Sauce

Transfer to a bowl and add:
1/2 Cup Oat Bran
1/4 Cup Unsweetened Coconut Flakes
1/4 teaspoon Vanilla Extract
1 TB Coconut Sugar (or your favorite granulated sweetener)
1/4 teaspoon Cinnamon

Spoon discs onto a sheet pan lined with parchment paper

Sprinkle tops with Coconut and a drop of Light Agave

Bake on 400 for about 30 minutes
Cookies will have a slight crisp top with a chewy inside

**ChefTiffy Tip**
Be sure to use a yellow plantain as they are much sweeter than the green ones. The blacker the skin, the sweeter the plantain.
