Fresh & Simple Flavors to top your chicken

² Ingredients

  •  1 sprig Cilantro
  •  1/2 lime yields Lime Juice
  •  1/4 cup, sliced Mangos
  •  1/4 medium (approx 2-3/4" long, 2-1/2" dia) Green Peppers
  •  1/4 medium (approx 2-3/4" long, 2-1/2" dia) Sweet Red Peppers
  •  1 serving (serving = 1/4 cup uncooked) Lotus Foods Forbidden Rice
  •  1/4 small Red Onions
  •  6 oz, boneless, cooked, skinless Skinless Chicken Breast
   

q Directions

Cook 1/4 Cup of Black rice as directed on package (I used “Forbidden Rice” cooked with about 3/4 cup water & a pinch of salt)

In a Small Bowl, mix:

1/4 of a Green Pepper, chopped

1/4 of a Red Pepper, chopped

1/4 of a Small Red Onion, chopped

1/4 Cup Mango, chopped

Squeeze of Lime juice, from 1/2 a lime

1 TB Chopped Cilantro

Plate Rice and top with 3oz. cooked Chicken Breast (I used left-over chicken that was cooked with Garlic Powder)

Top with Salsa.
