Fresh & Simple Flavors to top your chicken
Cook 1/4 Cup of Black rice as directed on package (I used “Forbidden Rice†cooked with about 3/4 cup water & a pinch of salt)
In a Small Bowl, mix:
1/4 of a Green Pepper, chopped
1/4 of a Red Pepper, chopped
1/4 of a Small Red Onion, chopped
1/4 Cup Mango, chopped
Squeeze of Lime juice, from 1/2 a lime
1 TB Chopped Cilantro
Plate Rice and top with 3oz. cooked Chicken Breast (I used left-over chicken that was cooked with Garlic Powder)
Top with Salsa.
