Keep this cool side dish simple with light flavors.
In a small Saute pan, heat 1/2 TB Extra Virgin Olive Oil.
Add in 1 diced Yellow Squash and cook to your desired texture - I like mine firm.
In a Bowl, Mix:
2 Cups Cooled Whole Wheat Cous Cous
The Yellow Squash
Cherry Tomatoes
The Juice of 1 Lemon
2 TB Chopped Basil (or more if you like)
Season with Salt & Pepper if desired.
