Winter weather doesn't mean all pasta has to be warm! Sometimes I just want something FRESH. (Truth is, I bought too much cottage cheese and have been forcing myself to find creative ways to use it up!) This pasta salad has that extra dose of protein from the cottage cheese, and is packed with nutrients from the veggies!
Cook pasta according to package directions, in boiling salted water. Drain and allow to cool.
Stir together greek yogurt, cottage cheese, olive oil and salt & pep.
Lightly toss with pasta and vegetables. Season to taste.
Refrigerate and serve. Devour!
