Couscous Chicken Veggie Meatballs from the 7-Day Cleanse I created.
Season ground chicken. I used Mrs. Dash original blend (salt-free) and crushed pepper. After meat is seasoned, leave in a bowl. Next, very finely (and when I say fine I mean as fine as you! Haha jk!) chop the bell pepper and onion. Next mix the chopped onion and bell pepper with the ground chicken. Cook couscous according to directions on the box. Add cooked Couscous to the meat and veggie mixture, then mix in 2 large eggs. Next roll the mixture into 14 equal sized balls and place in a non-stick baking pan. Bake on 385° for 20 minutes.
