Filled with spinach and ricotta and bursting with flavour. Healthy comfort food at its finest!

² Ingredients

  •  6 serving (serving = 1 slice) Jennie-O Extra Lean Turkey Bacon
  •  1 cup Spinach
  •  1 serving (serving = 1/4 cup) Precious Low Fat Ricotta Cheese
  •  3 serving (serving = 1/2 cup) Fresh & Easy Liquid Egg Whites
   

q Directions

1. Preheat the oven to 375
2. Line a muffin tray with cupcake liners and spray with non-stick spray
3. Fill the trays with the turkey bacon by wrapping them in a circle
4. Place the spinach in each one at the bottom, then 1/2 tbsp ricotta on top (fill with any other desire vegetables/seasonings)
5. Carefully pour about 1/4 cup of egg whites into each mould (some may seep out from underneath but that’s okay because the cupcake liner will catch it and you can easily remove it after cooking)
6. Bake for 20 minutes or until the eggs are set. I broiled for a few minutes after baking for 20
7. Remove from oven, remove from cupcake liners and any extra egg on the outside!
