Deliciously cheesy, filling, and only 4 ingredients!
1. Preheat oven to 425
2. Microwave your mushrooms for 20 seconds to soften them up a bit
3. In a bowl, mix your egg whites and cut up veggies
3. Take your cheese and tear it into small pieces, then carefully disperse it in the mix so as to not let it all fall to the bottom
4. Pour the mix into a greased (I used olive oil cooking spray) casserole dish
5. Bake for about 40 mins
6. It’ll be hot so let it cool for a few minutes and then enjoy!
