This can serves as an appetizer or a side of the main dish. Its has that restaurant look and taste to it.
Slice the eggpplant and brush with some olive oil on both sides and bake at 425 for 15 min on one side and 7 min on the other side. Spread tomato sauce (I make mine at home), sliced onions, grilled chicken and avocado. Roll it up and enjoy. Super easy and yummy.
