Crispy on the outside like a toasted bun, but fluffy on the inside, these eggplant "buns" are a great low carb alternative to traditional burger buns!
Ingredients
1 small eggplant; sliced 1/2" thick
Salt and Pepper
Cooking Spray
Directions
Preheat the oven to 400 degrees F and line a baking sheet with foil
Arrange the eggplant slices on the baking sheet and spray both sides with cooking spray and season with salt and pepper
Roast for 9 minutes
After 9 minutes, flip each eggplant piece over
Return to the oven to roast for another 9 minutes or until cooked and crispy
Transfer to a plate and use as the "buns" to your favorite slider recipe
