Do you like eggplant? I know I do and this particular spread/ dip is an often guest on my table. Enjoy.
Broil 1 big eggplant till cooked through. Let it cool. Now throw the eggplant into the food processor or blender together with 2 tbsp tahini ( sesame paste), 2 tbsp ff ‪#‎fage‬ greek yogurt and 2 tbsp lemon juice. Blend and empty into a bowl. Now squeeze in 1 big clove of garlic a pinch of salt. Mix and enjoy with pita bread or brown rice crackers. P.S I have made this spread with sunflowerseed butter as well and it takes just as great.
