Junior Mints were my inspiration for this chocolate covered pumpkin melt in your mouth idea!
.) Mix 1/2 scoop vanilla casein, 3 tablespoons pumpkin puree, and either 5 drops of cinnamon liquid stevia or a few shakes of cinnamon and a stevia packet.
.) Form into small balls. (I made 20) and place on a small plate covered in foil.
.) Place in freeze for about an hour. (Frozen items are easier to cover in chocolate than mushy soft balls!)
.) Melt your chocolate, place a ball in the chocolate, cover it well and use a fork to tap off the excess chocolate back into the bowl.
.) Place in freezer on the foil to make sure chocolate hardens well. I store mine in the freezer because I like them harder, but fridge should work as well!
