Baked oatmeal is a great way to start the day, especially a fruity one!

Baked Strawberry-Banana Oatmeal

Ingredients:

Oatmeal
-1/2 cup oats (use certified gluten-free if need be!)
-1/4 teaspoon vanilla extract
-1 packet stevia
-1/4 cup mashed banana
-1/4 cup unsweetened almond milk
-1/8 teaspoon salt
-1/2 scoop MRM Low Carb Protein Strawberry-Banana

Topping
-1 or 2 strawberries
-1 tablespoon plain greek yogurt
-1 teaspoon MRM Low Carb Protein Strawberry Banana

Directions:
1.) Preheat oven to 375 degrees.
2.) In a small bowl combine all the oatmeal ingredients listed above. *(It's okay if you still have some lumps of banana!)*
3.) Spray a small oven-safe dish, loaf pan, or ramekin and pour in mixture.
4.) Place in oven for 20 minutes. After 20 minutes you can set oven to broil for a few minutes if you'd like a nice crunchy top!
5.) While oatmeal is baking prepare topping by warming up 1-2 strawberries for a few seconds in microwave. Add yogurt and protein and whip!
6.) Take oatmeal out of oven, add topping, and enjoy!
