Moist and delicious coconut cupcakes!
1/2 cup + 2tbsp coconut flour
4 eggs
2 egg whites
1/2 cup baking stevia
1c unsweetened coconut milk
2 tsp vanilla
1/2 tsp baking soda
2 Tbsp sprinkles
Frosting:
2 Tbsp low fat cream cheese, room temperature
2 Tbsp plain Greek yogurt
1 Tbsp raw honey
Cupcakes:
1.preheat oven to 350
2.mix all ingredients together
3.line muffin tin & fill evenly with batter
4.bake for about 15-20 min
Frosting:
1.melt honey in microwave for 30 sec
2.mix everything together
3.spoon on cooled cupcakes
4.sprinkle coconut & sprinkles
