Soft & Cakey texture; they were a hit at the office!!
Cinnamon Chip Cookies: Cream 1/4C coconut oil w/ 1/2C sweetener of choice. Add 1T vanilla extract then 1 large egg (room temperature) & continue to beat. In a VitaMix, grind 1/2C rolled oats into a flour. Add 1/4t salt, 1t baking soda & pulse to mix. Add 2C whole wheat flour & pulse to mix. Slowly add flour mixture to liquid mixture. Stir in 1/2C applesauce & mix well. Stir in 1/2C cinnamon chips. Spray a cookie sheet w/coconut oils. Roll into balls and flatten. Bake @350F for 12-15mins.
