Tastes just like what you'd find at a fair!!
First, grind the 1/2 cup oats into a flour. Then add the 2 TBSP coconut flour, 1 egg white, 5 TBSP unsweetened almond milk, 1/4 tsp baking powder, 1/2 tsp vanilla extract, 1 tsp butter extract (not the vanilla, as listed), and 2 stevia packets and blend again. Heat a large pan with nonstick spray. Then pour half of your batter in the pan, into swirls. Cook on medium/high heat for 2-3 minutes until the tops are cooked through. Remove from pan. Repeat for a second funnel cake with the remaining batter. Make the topping by mixing the 1 TBSP coconut flour and 2 TBSP stevia. Top with strawberries, if desired.
