Last weekend I went to a party that had oreos I really wanted... So I made my own this weekend! The outer cookies were so perfectly crisp and dense. I'm in love.
Combine all of the oreo cookie ingredients (garbanzo bean flour, water, cocoa, vanilla extract, and 2 stevia packets) and whisk them together. It should be pretty thick! Spoon into two portions in a pan sprayed with nonstick spray. You want them sort of thin and as wide as you can get them. Let cook on a low heat for 2 minutes, flip, and cook another 2 minutes. Those are your two outer cookies! Make the filling by first blending the cottage cheese with a handblender. It gets a lot creamier this way! Then stir in the whey protein and stevia drops with a spoon or knife. Spread the filling between the two cookies and enjoy!
