The dough of the Cinnamon Roll is infused with Vanilla Cake Protein from Metabolic Nutrition, the filling is a mixture made with Honey Pretzel Peanut Butter from Wild Friends, and the Icing base is made from Greek Yogurt! A delicious and "healthy" dessert!
For Dough:
Oat Flour, White-Wheat flour, salt, protein powder, baking soda, coconut oil (melted), 2tbsp honey, eggs, 1/4-1/2 cup soy milk.
Mix all dry ingredients together in big bowl. In separate bowl, mix together all wet ingredients EXCLUDING soy milk (but includes coconut oil, which should be melted). Combine wet to dry and then knead all ingredients together, ***WHILE KNEADING add in SOY MILK one tbsp at a time as needed to combine all ingredients together***, until well-mixed and a dough is formed.
Once kneaded together, place dough between two sheets of parchment paper and roll out into a square using a rolling pin.
Set aside and make filling.
For Filling:
Honey Pretzel peanut butter by Wild Friends (NOTE: the ingredients list says 'Whole Foods PB, but that is not what I used, they just did not have Wild Friends in the system so I substituted for a more accurate calorie/nutrition count), 1/8-1/4 cup soy milk, 1tbsp honey
Mix together peanut butter, honey, and soy milk until combined and a creamy texture forms.
Remove top sheet of parchment paper from rolled out dough and spread filling evenly over the dough.
Started from the flat thin edge of the square that is closest to you, begin rolling the dough into a spiral (like a cinnamon roll is rolled), removing the parchment paper as you go.
Once rolled, bake in oven on 325 for 10-15 minutes (until dough is cooked).
Remove from oven and let cool.
While cinnamon rolls are cooling make your icing.
For Icing:
Mix together greek yogurt, a drizzle of honey, and cream.
Once cooled, cut roll into 10 individual cinnamon rolls and top with icing. Serve warm for best flavors!
