This recipe is a whole meal and only used one pan!!! So flavorful and simple you would be crazy not to make it!

² Ingredients

  •  1 small Yellow Summer Squash
  •  1/2 tsp Garlic Powder
  •  1/2 tsp Paprika
  •  1/2 lemon yields Lemon Juice
  •  1/2 medium (2-1/2" dia) Onions
  •  1/2 medium Zucchini
  •  1/2 cup Hummus
  •  1 serving (serving = 1 cutlet) Publix Boneless Skinless Chicken Breast Cutlets
  •  1 serving (serving = 1 medium pepper) Publix Red Bell Pepper

Hummus Chicken

Ingredients:

- 2 boneless skinless chicken cutlets

- 1/2 cup Cucumber Spinach Hummus (or any hummus)

- Chopped Veggies (I used zucchini, onion, bell pepper, and yellow squash)

- juice of 1/2 a lemon

- 1/2 tsp garlic powder

- 1/2 tsp paprika

Directions:

Preheat oven to 400 Fahrenheit.

Spray a 9×13 pan with coconut oil spray (or any non stick spray). Cut veggies and place in pan. The spray veggies with coconut oil. Take chicken cutlets and cover the entire tops with the hummus. Then sprinkle with garlic powder and paprika. Take the 1/2 lemon and squeeze the juice over the chicken and veggies.

Cook for 20 -25 minutes or until cooked through.
