  •  1 cup, cooked Quinoa (Cooked)
  •  1 serving (serving = 1/2 cup slices) Euro Fresh Farms Mini Cucumbers
  •  1 grape Grape Tomatoes
  •  1/8 medium Red Onions
  •  1/2 avocado, NS as to Florida or California Avocados
  •  1/2 cup, sliced Mangos
  •  1 serving (serving = 1/2 cup) Trader Joe's Pomegranate Seeds
  •  2 tbsp Peppermint (Mint)
  •  1/2 cup Cilantro
  •  1 tablespoon Olive Oil
  •  1/2 cup Lemon Juice
  •  1/2 cup Orange Juice
  •  1 serving (serving = 1 tbsp) Aunt Patty's Organic Blue Agave Syrup
  •  1 tsp Minced Garlic
  •  1 teaspoon Dijon Mustard

Salad: Combine Kale, quinoa, cucumber, tomatoes, onion, avocado, mango, pomegranate, mint, and cilantro.

Dressing: Combine olive oil, lemon juice, orange juice, agave syrup, garlic, dijon, salt and pepper.
