Very healthy and quick-fix meal option.

² Ingredients

  •  3 oz, boneless, cooked Chicken Breast
  •  3 wedge or slice (1/8 of one 2-1/8" dia lemon) Lemon
  •  2 cup, chopped Kale
  •  1 cup Spinach
  •  3/4 oz (49 kernels) Pistachio Nuts
  •  1/2 tbsp Honey
  •  1 serving (serving = 1 oz) Whole Foods Market Goji Berries
   

q Directions

About 2 cups of kale washed and chopped. Pour over the mixture of 1/2 lemon juice and 1/2 tsp of honey. Massage it a little bit. Then add 2 cups of spinach,2 tbsp of unsalted pistachios, 1/2 baked chicken breast and 2 tbsp of soaked goji berries. Mix everything together and sprinkle with sliced almonds. This was so fast and suppa dewish!!! Feel free to add olive oil to the dressing as well but I left it out since I added nuts for healthy fats.
