Lemon Blueberry Egg White Oatmeal Protein Pancakes
Mix all ingredients in a bowl, pour on heated skillet. I use a square one. This stuff is pretty runny, so I just fill the whole skillet and once it cooks it begins to solidify. Once its pretty cooked, I take the spatula and draw a cross with it, making 4 square-ish pancakes. Flip them over and let them cook for a minute or so on that side. Take off, stack on your plate, top with fresh blueberries (or any berries). I like to put a tiny bit of sugar free syrup (You can cook with the fruit in it...that's how Matt likes it. I like to cook and then just top with the fresh fruit...it's also a lot less messy that way :)
