Lots of good stuff in these mango pancakes. I topped them with a strawberry cream sauce and it was delicious.
In a VitaMix blend the rolled oats, almonds, coconut flour, baking powder and ginger. Then add the mango, egg whites and greet yogurt. Blend until smooth. Spray a pan with coconut oil and put 1/4 batter on the pan at a time.
For the topping just microwave the strawberries with the truvia for 1 minute and then add the chobani.
