With only a handful of ingredients these are fast and easy taste awesome and are perfect pick me up!!
1/4 c almond milk
1/8 -1/4 tsp almond extract
1/3 1 tbs sliced almonds
1/2 c Mighty Maple Peanut Butter( I have seen it in a few different grocery stores or you can order online #iherb carries it. You can also use white chocolate peanut butter it wont be as mapley but still really good.The brand is the peanut butter company its awesome stuff ... My favorite!)
1 tsp vanilla
10ish drops English toffee stevia (do to taste)
1 - 1 and1/4 cup Oats
Optional : 1tbs maple syrup . If you don't have the English toffe stevia- which I HIGHLY recommend you buy use 2 tbs maple syrup but I have never made it without the toffee stevia so check the taste for yourself.
Put almond milk in pot and warm or bring to a low simmer. Turn heat to very low Add peanut butter and stir to melt while its melting add stevia, almond extract, vanilla, (optional maple syrup) then stir in oats and almonds. Keep stirring until everything is blended well! Adjust toffee stevia and almond flavoring if needed. Remove from stove and make little balls with her hands and place on parchment paper. Enjoy! You can keep mine in the fridge if you want them to last longer. But I like them room temp as well!
