Awesome as breakfast meal prep for the week!
1. Saute onion, red pepper, spinach and cilantro in coconut oil.
2. Pour in egg whites and top with tomatoes, sprinkle with salt and pepper.
3. Transfer pan to oven and bake at 375 for approx 30 min or until eggs are set. (Option: switch to broil at end to brown top)
4. Slice in 4 equal pieces and top each piece with 1 tbsp salsa, 1 tbsp diced avocado and sprinkle of chopped cilantro.
