This omelet uses vlita (amaranth greens) - an extremely nutritious edible weed that is eaten often in Greece! If you cannot find vlita, you can always substitute it with spinach!
Sautee diced onion in olive oil on med heat. Add in vlita and cook some more. Turn heat to high and add in whisked egg. Cook on one side, then flip and cook on the other. sprinkle one half with feta cheese, then fold omelet over in half.
