Minty No Bake Chocolate Chip Bars

² Ingredients

  •  1 dash Sea Salt
  •  1 serving (serving = 1/3 cup) Trader Joe's Organic Raw Walnut Halves & Pieces
  •  100 g Medjool Dates
  •  1 serving (serving = 5 pieces) Nature's Promise Organic Pitted Prunes
  •  1 serving (serving = 1 tbsp) Trader Joe's Cocoa Powder Unsweetened
  •  1 serving (serving = 1 tbsp) Nestle Semi-Sweet Mini Chocolate Chip Morsels
  •  1 serving (serving = 1 cup) Blue Diamond Almond Breeze Unsweetened Vanilla Milk

q Directions


In ingredients *ORANGE EXTRACT* is listed. Recipe calls for *Peppermint Extract* NOT ORANGE!


Place almonds and walnuts into food processor or high powered blender (I used our Vitamix)
Grind nuts, add 1/8 teaspoon of peppermint extract, and dash of salt
Add 1/2 cup of cacao powder gradually scraping the sides of blender to be sure mixing completely
Remove from blender
Add dates and prunes with a splash of almond milk (I poured in enough to just cover the blades on the bottom maybe 1/4 cup)
Blend dates and add 1/8 teaspoon peppermint extract
Add about 1/4 of first mixture, blend, repeat until entire mixture is together (should be sticky enough to stay together just by pressing together if not add dates 1 at a time until consistency is thick)
Remove from blender and hand mix in chocolate chips and/or additional chopped walnuts
Press out onto parchment paper in an 8x8 baking pan
Place in freezer for ~1 hour
Cut into 16 squares and enjoy
Store in the freezer in an air tight container for up to 2 weeks
