A healthy variation of traditional banana bread, that doesn't taste like it's full of protein! Vegan option available
Recipe: 1/2c bobs red mill 10 grain pancake and waffle mix (lower in cals than oats!) 1/3c oats (30g), ground into a flour AFTER measuring
1T coconut flour
2 sc protein powder (I used sportpharma specialized in vanilla bean and a vegan protein - you can sub banana protein for one scoop)
1/2t baking powder
1/4t baking soda
1/2t cinnamon
pinch salt -MIX TOGETHER-
225g banana (well mashed. i like to put mine cut up in the microwave for 15sec beforehand)
1 egg, 2 whites (VEGAN: 1.5T ground flax mixed w 3T water, or 2T egg replacer)
1/4 milk (i used almond)
1/4t apple cider vinegar (helps the baking soda react)
2 pkg stevia -MIX-
add wet mix to dry mix and combine. Put into WELL (emphasis on WELL) greased loaf pan and bake at 325 for 40-45mins (oven times will vary). Let cool for 15-20mins before transferring to wire rack. Cut into slices.
