High protein, moist, healthy but flavorful muffins in a mini form!
Recipe and instructions: 1/4c large flake oats 1T coconut flour 1/2 sc protein powder about 1/6t baking soda and powder 1T bobs red mill 10 grain flour cinnamon -MIX- in blender combine: 1 egg white 2T greek yogurt splash almond milk (couple tbsp) stevia ~1/5 a banana 1tsp coconut oil, melted -BLEND- mix wet and dry. bake just under 350 degrees for about 8-10 mins in 5 mini muffin spots until set. Topped with 1TBSP dark chocolate dreams peanut butter ;)
