A new take on the average muffin...the Paleo Muffin Top! Made with the unexpected acorn squash and Enjoy Life Chocolate Chips. So delicious.
Preheat oven to 350 degrees.
In a medium bowl, mix all dry ingredients. Set aside.
In a food processor, pulse acorn squash until smooth. Add the rest of the wet ingredients until blended.
Add the wet ingredients to the dry, and mix well with a spoon.
Spray whoopie pie pan with coconut oil spray. Fill the pan with batter until they are just about full. The batter doesn’t rise too much.
Bake for 15-17 minutes.
