So I was given a challenge to come up with a paleo recipe for rhubarb... well, I took a tried-and-true muffin recipe and tweaked it... I think they are great, but you will have to try them for yourself :)
Preheat oven to 350 F.
Grease muffin pan (don't use paper liners, muffins will stick).
In a large bowl, mix dates with rhubarb and add enough hot water to cover. Leave for about 5 minutes (to soften).
In another bowl, mix the rest of the ingredients until combined.
Drain dates and rhubarb, and stir into muffin batter.
Evenly distribute into 12 muffin pan, and bake 12-18 minutes.
Remove from muffin pan, and let cool on rack.
These freeze well.
