A "Rolled Up" take on PB & Jelly!
In a Bowl, Whisk:
2 Egg Whites
1 TB Unsweetened Almond Milk
1 TB Flour of Choice - I used Brown Rice Flour
(Add sweetener if desired - I topped my crepes with a dash of Coconut Sugar after rolled)
Lightly Oil an Omelette pan and Heat on Medium Flame
Pour 1/2 of the egg white batter into pan and thin by spreading out
After about 2 minutes, flip and cook other side for about 1 minute
Lay crepes flat and fill each middle with 1/2 TB of Peanut Butter and 3 Chopped Cherries.
Roll up & Serve!
