Great little afternoon pick-me-up!
In a small bowl, combine coconut flour, protein powder and almond milk then set aside. Chop fig into 5 equal pieces and place a pea-sized amount of peanut butter in each piece. Take some of the protein mixture, flatten it in the palm of your hand and place fig in the centre. Shape into a small ball and roll in shredded coconut. Refrigerate for half an hour to set and serve immediately.
