³ Description

Ok, I get a lot of mixed opinions on this sandwich but for me its awesome, packed with nutrition and provides me with the energy I require to get through some of my most gruelling workouts!

² Ingredients

  •  1 medium Egg
  •  1/2 avocado, NS as to Florida or California Avocado
  •  1 serving (serving = 1 slice) Food For Life Baking Company Ezekiel 4:9 Sprouted 100% Whole Grain Bread
  •  1 cup Spinach
  •  1 serving (serving = 1 tbsp) Kraft All Natural Peanut Butter
  •  1 serving (serving = 1/4 cup) Compliments Egg Whites
  •  1 oz, boneless, raw Sole (Fish)
  •  0.3 serving (serving = 1 tbsp) Carrington Farms Coconut Oil
   

q Directions

* Toast 2 slices of ezekiel bread.
* In a frying pan, saute some spinach with your coconut oil. Then saute the egg whites. I have my sole fillets pre baked and warm it up in the frying pan beside the spinach/egg whites. When all is done crack one hole egg and cook till sunny side up.
* On one half spread nut butter of your choice
* On the other half spread as much as avocado as you like ( i use half an avacado per sandwich)
* I like to add hot sauce on my egg whites and spinach
* Ok, time to layer. To me this process is crucial. goes like this:

TOAST w/AVACADO(top)
SUNNY SIDE UP EGG
SPINACH/EGGWHITES
FILLET OF SOLE
NUT BUTTER TOAST(bottom)

nom,nom,nom,nom,nom

I eat this sandwich different every time!
*ground turkey/chicken/sliced turkey etc. in place of the fillet of sole.
*almond buter instead of peanut butter...
the options are endless!!!!!!!!
