Cheesecake that is creamy, thick, smooth, and super macro friendly!
Mix all ingredients with a mixer until smooth (it's best to have room temp ingredients, and the liquid stevia is to taste). Put parchment paper on the bottom of a 6" pan and grease the sides (I used coconut oil). Pour batter in the pan (but before pouring, slam your mixing bowl on the counter a few times to get rid of air bubbles). Bake at 325F for 30 min, then 200F for 55 min. Remove from oven and let cool. Run a knife around the edge and dump on a plate. Refrigerate overnight before eating.
