Zesty and moist banana nut bread - without the heavy calories!

² Ingredients

   

q Directions

Ingredients:
3/4 cup coconut flour
3/4 tsp baking soda
1/2 tsp salt
1 tsp cinnamon
1 tsp pumpkin spice
2-3 VERY ripe bananas
1/2 cup pumpkin puree
2 tsp butter
1/2 cup light brown sugar
1 large egg
1 egg white
1 tsp orange extract
1/4 cup chopped raw natural almonds
1/4 cup unsweetened almond milk
1/2 cup low calorie syrup
1 tbsp maple almond butter

1. Set oven to 325 and in a medium sized bowl, whisk flour, baking soda, pumpkin spice and salt then set aside.
2. In a large bowl, cream the butter and sugar with an electric mixer.
3. Add egg whites, egg, bananas, pumpkin and orange extract then beat until thick.
4. Add flour mixture, chopped nuts and almond milk and blend until combined.
5. Grease your 9 x 5 pan with Pam and pour batter in. Place on center rack and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean!
6. Glaze! Combine 1/2 cup low cal syrup, 1 tbsp maple almond butter and cinnamon in a small bowl, microwave for 15 seconds, stir and spread over your bread!
7. Let sit to cool for 20 minutes then it's ready to slice!
