When you look at the ingredients in a typical coffee cake recipe, you will see things like sour cream, whole milk, butter, refined flour, and a bunch of unnecessary sugar. But we don’t need all that. My recipe for Raspberry Almond Coffee Cake will not disappoint. Grain-Free, Gluten-Free, and Guilt-Free….these are melt-in-your-mouth perfection!!
ngredients:
2 cups almond flour
2 eggs
1 scoop vanilla protein powder
¼ cup brown sugar
¼ cup unsweetened applesauce
¼ cup coconut oil
¼ cup unsweetened almond milk
1 tsp vanilla
½ tsp almond extract
1 ½ tsp baking powder
½ tsp baking soda
¾ cup raspberries
2 tbs stevia
Directions:
Preheat oven to 350 degrees. Combine all ingredients together in bowl except for the raspberries and stevia. Mix raspberries and stevia together then set aside. Pour half of the cake mixture into greased 8x8 glass pan. Spoon raspberry sauce on top then pour the rest of the cake mixture over the raspberry sauce. Bake for 15-20 minutes. Once cooled, cut into 16 squares and enjoy.
