Sauté 1 tbsp EVOO 1/4 cup yellow onions diced 1/2 cup spinach 1/4 cup zucchini diced 1/4 cup orange bell peppers 1/4 cup baby Bella mushrooms 1/3 cup sweet potato diced 1 tsp black pepper 1 tsp paprika Baked 6 oz Sardines at 350 until cooked/tender Add 3 very ripe tomatoes (diced) 1/4 cup chopped dill 1/4 cup chives Ta-Da & Enjoy Serves 2 (added a sunny side up egg to each plate, love the yolk w/ the tomato sauce from the sardines)
