Egg-White Omelette Pizza topped with Vegan Tofurkey Sausage, caramelized Onions, and sliced homegrown Tomatoes. Served over a bed of fresh Baby Spinach.
Spray Coconut Oil spray in a medium skillet over a medium heat.
Add egg whites into pan, then sprinkle in sliced onions and tomatoes followed by the Tofurkey sausage. Turn heat down to a low-medium and let cook for about 2-3 minutes. If the top needs to cook longer, turn the burner off and cover, letting the top of the "pizza" steam for a minute or two.
Once finished, heap spinach on a plate and gently use a large spatula to transfer the pizza from the skillet to on top of the spinach.
