Something that's really simple to put together, and super tasty!! You could easily mix it up with whatever veg you want.
Preheat oven to 180C (350F)
Grate zucchini and parsnip.
Add everything (besides the chives) into a large bowl, thoroughly and gently mix everything.
Grease tray and add mixture, sprinkle chives on top and bake in the oven for 30 minutes.
Once it comes out of the oven gently press the top, it should be firm at the touch to know it's cooked.
Great to enjoy with a crisp fresh salad.
