Feeling Saucy? Bored with the ordinary? Tempt and trick your taste buds!! I had some left over apple I needed to use up and weirdly enough...apple pie ice cream was the first thing I thought of! This is really easy to make and even though there aren't a lot ingredients, it really does taste like apple pie in ice cream, in disguise! Thinking while eating; some oat clusters would make this even more delish, for that crunch and a good way to incorporate a version of a pie crust into the ice cream…food for thought! Quick notes; any type of apple or sugar substitute will still work. I used coconut sugar for an added caramel taste. Vinegar might seem a bit weird to some, but it adds another dimension to the flavour and it’s a good pan deglazer.
Leaving the skin on, grate/chop your apple
Heat up a frying pan to medium heat and add your apple
Once the apple starts to sizzle slightly add the nutmeg, cinnamon and sugar
Cook until the smell and the spices come up and the apple is slightly coloured, keeping an eye on it making sure it doesn't burn
Add the vinegar to deglaze the pan and wait till most of the liquid has disappeared. If you feel like you need more liquid, I would use water, white wine vinegar can be quite strong.
Take the pan off the heat and transfer apple to a food processor/blender (I used a mini food processor)
Wait until the apple has cooled, then add the yogurt and whizz up to preferred consistency (I did mine to be quite smooth)
Take out the processor blade and put in the container in the freezer
Leave in the freezer for 30 minutes, then stir, leave another 30 minutes, stir and scrap down the sides really well
Pop the blade back in and give a quick whizz – DONE!
