Delish and perfect for when you're in a hurry! Had two of these for breakfast paired with one piece of cinnamon raisin Ezekiel toast and a small apple. Satisying after leg day at the gym!
Preheat oven to 350 degrees and crease a muffin pan. In one bowl, whisk two eggs, 6 egg whites and 1 tbsp Mrs. Dash Southwestern Chipotle seasoning. In another bowl, mix together 1/4 cup black beans, 1/4 cup corn, 1/4 cup chopped onions, 1/4 cup chopped green peppers and 1/4 cup chopped scallions. Fill each muffin opening 1/4 of the way with egg mixture and them add in veggie mix to fill 3/4 of the way. Bake for 20 minutes. Makes about 9.
