A clean, simple & delicious take on an classic! Packing protein and a punch!

² Ingredients

  •  2 tablespoon Peanut Butter
  •  1/4 cup, sliced Red Sweet Pepper
  •  1/4 cup, pieces or slices Mushrooms
  •  1/4 cup, sliced Onions
  •  1/4 cup, chopped Green Peppers
  •  1/3 cup (8 fl oz) Water
  •  150 g Shrimp
  •  3 serving (serving = 1 tsp) Huy Fong Foods Sriracha Hot Chili Sauce
  •  3 serving (serving = 3 tbsp) Trader Joe's 100% Liquid Egg Whites
  •  2 serving (serving = 4 oz) House Foods Tofu Shirataki Noodles
  •  1 serving (serving = 1/3 cup) e.d. Smith Pure Pumpkin
  •  1/2 serving (serving = 2 tbsp) Great Value Crunchy Peanut Butter
   

q Directions

For the Sauce
- Combine peanut butter, pumpkin, hot chili sriracha and water in a small bowl.
- Warm in a small saucepan if desired, or sauce will warm when combined below.
Note: You may want to adjust the amount of sriracha according to your taste, it is spicy!

For the Noodles
- Cook your noodles (or noodles of choice) accordingly.

For the Stirfry
- In a large non-stick pan or pan sprayed/drizzled with olive or coconut oil, saute onion, mushrooms and peppers over medium heat for about 3 minutes.
- Add shrimp and cook another 6 minutes.
- Add liquid egg whites and continue cooking until they are cooked thoroughly, about 4 minutes.

To serve
- Combine the noodles, stir fry and sauce in a large bowl.
- Divide in two and serve.
