Banana bread pancakes with a banana maple "icing". My boyfriend loved these, even though he ONLY likes buttermilk pancakes and he doesn't like bananas in his pancakes :)
1 ripe banana
1/4 cup white whole wheat flour
3 TBS almond meal
2 TBS rolled oats
1 egg
1 egg white
2 1/2- 3 tbs cottage cheese
1/2 tsp baking powder
Cinnamon
1/4 tsp vanilla
Stevia (if desired, to taste)
Banana maple "icing": mash half banana with 1 TBS Justin's maple almond butter and put in refrigerator overnight if desired :)
Scoop batter onto greased griddle (I used coconut oil spray) and cook for a few minutes on each side.
Note: this serves two! Or one if you're really hungry
