Mmm banana coconut french toast! This recipe is one of my favorites. The perfect breakfast! :)

² Ingredients

  •  1 large Egg (Whole)
  •  1/2 tsp Cinnamon
  •  1 serving (serving = 3 tbsp) Crystal Farms All Whites 100% Liquid Egg Whites
  •  1 serving (serving = 1 medium) Dole Bananas
  •  0.1 serving (serving = 1 cup) Trader Joe's Unsweetened Vanilla Almond Milk
  •  0.3 serving (serving = 3 tbsp) Let's Do Organic Unsweetened Organic Coconut Flakes
  •  1/2 serving (serving = 2 tbsp) Earth Balance Coconut & Peanut Spread
  •  2 serving (serving = 1 slice) Food For Life Baking Company Ezekiel 4:9 Cinnamon Raisin Bread

q Directions

Heat a large skillet on the stove on medium heat. Mash large banana and 1 TBS unsweetened coconut flakes in a small bowl. In another bowl, mix 1 whole egg, 1 egg white, a splash of almond milk and cinnamon. Take first slice of bread and mash banana mixture on both sides with a fork. This might get a little messy, but it’s worth it! Then place the bread in egg wash and let soak for 30 sec on each side. Put bread on hot, greased skillet (I greased mine with coconut oil). Flip bread and cook until both sides are golden brown and caramelized! Repeat with other slice of bread. Cut both pieces of bread diagonally, and stack them on top of each other. Melt 1 TBS coconut peanut butter in microwave for 20 seconds and pour on top! Enjoy!!
