Cheesecake and pancakes. Nothing better :)
Recipe:
1/3 cup oat flour
1 egg
1 egg white + 2 tbs
2 tbs coconut flour
2 TBS vanilla protein powder
3 tbs low fat cottage cheese
1/2 tsp stevia
1/4 tsp vanilla
sprinkle of cinnamon
1/2 tsp baking powder
Blueberries
Topping:
1 TBS low fat cream cheese tiny bit of stevia to taste
1/8 tsp vanilla
melted blueberries
3 crumbled snackimals
Sliced strawberries
Mix all ingredients together (except the blueberries and the topping ingredients). Scoop batter onto heated griddle with coconut oil spray on it. Add a few blueberries to each pancake. Let cook a few minutes on each side, be patient and these will flip perfectly! In a small bowl, mix cream cheese, stevia and vanilla. Melt blueberries in microwave for about 45 seconds. When pancakes are cooked top each one with some of the cream cheese mixture and some sliced strawberries. Pour melted blueberries over top and crumble some snackimals all over the pancakes. ENJOY :)
