This parfait was one of my favorites to date! All of the flavors and textures combined very nicely.
To make the overnight oats, mix 1/2 TBSP chia seeds, 1/3 cup raw old fashioned rolled oats, 1/4 cup unsweetened almond milk, 1/4 cup plain Greek yogurt, 2 tsp unsweetened cocoa powder, and 2 stevia packets and let it sit in the fridge overnight. The chia seeds will plump up and the oats will soak up the liquid and become soft.
To make the chia jam, mix 1 TBSP chia seeds, 3 TBSP unsweetened almond milk, and 15-18 coconut stevia drops and also let it sit in the fridge overnight.
The next morning, assemble the parfait by putting in the chocolate overnight oats cold, puffed millet, sugar free raspberry jelly, the cold coconut chia jam, unsweetened coconut shreds, and the broken up chocolate brownie quest bar.
