I don't know why people always say oats are boring! This oat cake is definitely not boring nor is it lacking in flavor. My 8 year old neighbors can even attest to its deliciousness. Make it the night before and you have breakfast ready to go come morning!
Blueberry pie oatmeal cake
- 1/2 cup oats
- 1 egg
- 1/2 cup almond milk
- 1/2 scoop vanilla protein powder
- 1 tsp vanilla
- 1 tsp baking powder
- 1 tbsp chia seeds
- 1/2 cup blueberries
Combine all ingredients, gently folding in the blueberries last. Bake at 350 degrees for 35 minutes then let sit overnight. In the morning, cut cake in half and spread your filling:
- 1/2 cup Greek yogurt
- splash almond milk
- 1/2 scoop vanilla protein powder
- spoonful @sweetspreads white chocolate spread
- handful blueberries
