Enjoy this unique twist on caramel apples with these caramel apple (oat) cake pop bites; chunks of apple covered in baked oats then dipped in date caramel, pb, and peanuts.
Caramel apple (oat) cake pop bites - makes 6 bites
- 1/4 cup oats
- 1 tbsp date caramel
- 1 tsp vanilla extract
- 2 tbsp egg
- 2 tbsp chia seeds
- 1 tsp baking powder
- apple cut into chunks
Topping
- 1/4 cup date caramel
- 1/8 cup krema pb (or another pb of choice)
- 1/2 cup peanuts crushed
Combine ingredients (except apple) and mix well. Layer half of the mixture into the bottom of 6 mini cupcake liners. Push an apple chunk into the middle of each liner then cover with the rest of your batter. Bake at 350 for 20-30 minutes. Pop in the freezer for about 20 minutes. Dip your pops into the date caramel and pb and then roll In your peanuts and freeze until solidified.
